Lamb curry (Nahiri Gosht)

Ingredients: 

1kg Lamb

6 dstsp Sunflower Oil

1 Onion

1 dstsp Garlic puree

1 dstsp Ginger puree

2 Tomatoes

½ dstsp Red chilli powder

½ dstsp Turmeric

2 Green Chillies

Pinch Fresh coriander ***garnish***

½ dstsp Dried Fenugreek leaves

1 ½ dstsp Flour

½ dstsp Salt

Spice Mix

1 dstsp Coriander seeds

½ dstsp Cumin seeds

¼ dstsp Fennel seeds

4 Ground green cardamom

1 medium cinnamon stick

1 Star anise

4 Bay leaves

Spce grinder

Non-stick frying pan

Method: 

Heat oil in pan and fry onion until light brown

Add garlic and ginger and fry for few mins

Add lamb, green chillies and cook till lamb is sealed

Add red chilli powder, turmeric and salt, cook for 3 mins

Add Ground spice mix (Coriander, cumin, fennel seeds, cardamom, cinnamon, bay leaves, star anise) and fenugreek leaves.

Cook for few mins then add flour & water mix & cook for few mins

Add ¼ litre of water and bring to boil

Cover and cook on low heat for about 30 mins (add more water/flour as needed)
