Stilton & peppercorn Mushrooms (V)

Description:
Tasty Vegetarian started served on a toasted garlic muffin
Ingredients:
200g mushrooms
50g Stilton
50ml double cream
1 tbsp black peppercorns
1 Veggie stock cube
50g butter
Fresh parsley
Salt to taste (optional)
4 toasted garlic muffins
* quantities mostly a guideline

Cooking Time:
15 - 25 mins
Method:
Halve mushrooms
Saute mushrooms in a healthy knob of butter.
Add small amount of veggie stock.
Reduce sauce.
Add crushed peppercorns and cook for a few mins.
Add splash of double cream and cook until sauce is thick enough.
Crumble in some stilton, add chopped parsley.
Serve on a toasted garlic muffin.
