Spicy Noodle Soup (V)

A simple, yet remarkably tasty noodle soup.

Ingredients: 

2 Pints Vegetable Stock

1 Medium Onion Finely Sliced

2 - 3 Cloves Garlic Finely Sliced

3 - 4 Savoy Cabbage Leaves Finely Shredded

3/4 Cup Frozen Sweet corn

1-2 Small Chillies Finely Sliced

40 Grammes (1/2 sheet) Fine Egg Noodles

1 Egg

2 Teaspoons Dark Soy Sauce

2 Large Saucepans

Method: 

Pour vegetable stock into saucepan and bring to boil.

Add the onion, chillies, garlic and soy sauce. Grind in black pepper to taste and simmer for 10-15 minutes.

Whilst waiting, break noodles into short pieces and gently boil in a separate pan until soft.

Add the cabbage and sweet corn to the stock and simmer for 4 minutes.

Rinse noodles and add to soup to re-heat them.

Raise the heat to a rolling boil. Beat an egg and slowly drizzle into the soup whilst stirring continually. Cook for 1 - 2 minutes until the egg is cooked.
