Paneer Methi (V)

Ingredients: 

8 oz Paneer

½ cup chopped tomatoes

1 tbsp chopped ginger

1 green chilli

½ tsp cumin seeds

1/8 tsp hing

¼ tsp turmeric

¼ tsp chilli powder

2 tbsp cashew nuts

1 tsp fennel seeds 1 tbsp fenugreek leaves

1 tsp salt

1 1/5 cups milk

¼ tsp garam masala

Spice grinder

Liquidiser

Large frying pan

Method: 

Cut paneer into small cubes

Blend chpped tomatoes, ginger, & green chilli in a liquidiser

Grind cashew nuts & fennel seeds in a spice grinder

Fry paneer in a little oil until golden

Heat oil and add cumin seeds

Lower heat and add hing, turmeric, chilli powder, & cashew & fennel mix

Add liquidised tomato mix, coriander & methi

Stir for 3 – 4 mins

Add milk & stir until the sauce thickens slightly

Add garam masala and stir through, then serve
