Ingredients: 

Pizza Base

  • 450ml Warm water
  • 1 tsp sugar
  • 1 1/2" tsp dried yeast
  • 650g bread flour
  • 1/2 tsp salt
  • 1tbsp olive oil

Pizza Sauce

  • 1/2 can of chopped tomatoes.
  • 1 tsp freshly grated garlic - or to taste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp herbes de provence
  • 1 tbsp fresh chopped parsley
  • 2 tbsp olive oil
  • Salt and pepper to taste.

Method: 

Pizza Base

  • Add the sugar and yeast to the warm water. Cover and leave for approx 30 minutes for the yeast to foam.
  • In a large mixing bowl, mix the flour, salt and yeast mixture with a spoon until it starts coming together.
  • On a lightly floured surface kneed the dough for approx 10 minutes until it's smooth and elastic. Add extra flour if the dough is really sticky.
  • Place in an oiled bowl, cover with clingfilm and allow to rise for approx 2 hours, or until doubled in size.
  • Once the dough has doubled in size, knock back the dough on a lightly floured surface and divide into 2 equal portions. put the portions back into the oiled bowl and leave to rest for 20 minutes. This extra 20 minutes will make the dough easier to work when forming the pizza bases.
  • Preheat the oven at its highest setting.
  • Lightly oil a pizza stone or baking sheet and gently stretch out the dough into a pizza round.
  • Cook the pizza dough in the top of the preheated oven for approx 5 minutes until it has started browning, but not fully cooked.
  • Top with your favourite sauce and toppings and return to the oven for approx 10 minutes or until fully cooked.

Pizza Sauce

  • Place all the ingredients into a small pan, simmer until reduced slightly until a thickened, spreadable consistency is achieved.
  • Allow to cool before using.
